Joe Taylor opened on Errol Street in North Melbourne because we couldn’t find what we wanted to drink and eat in the same room. So we built it.
Thai heritage, written into the menu
The kitchen is anchored by Thai cooking — not a fusion gimmick, not a fine-dining riff, but the food we grew up around. Herb-forward, chilli-confident, designed to share across the table. You’ll find som tum and kingfish larb on the same menu as a slow-cooked massaman and a charred eggplant nahm prik.
A wine list that earns its place next to the food
Most wine bars build a list and then figure out what to feed people. We did it the other way. Every bottle on our by-the-glass program is chosen with the kitchen in mind — Australian and European, low-intervention where it makes sense, classical when that works better. Skin-contact whites and dry Rieslings hold up to chilli. Light reds — Gamay, Pinot Noir, Schiava — sit well with herbs and lime. We pour seventy-odd bottles at any time and rotate hard.
The room
Forty seats, two bar stools, candles after 6pm, no music after midnight. Errol Street is quiet enough that you can actually hear your friends. We like it that way.
